Ingredients
1 pint strawberries, hulled and cut in half
1 pint blueberries
1 pint raspberries, blackberries or BOTH
1 tablespoon good balsamic vinegar
1/4 cup sugar (or 1/4 cup Splenda if you want to lighten it up even more)
Fresh mint, for garnish
Directions
In a large bowl, combine the berries, vinegar and sugar. Stir gently. Cover securely with plastic wrap and refrigerate for 30 minutes to 1 hour. (DOT NOT MAKE MORE THAN AN HOUR AHEAD)
Garnish with sprigs of fresh mint.
NOTE: Add the raspberries/blackberries only 30 minutes or less before serving as the raspberries/blackberries will get mushy after an hour in the refrigerator
ADDITIONS & VARATIONS
- You can add fresh pineapple chunks and / or fresh white peaches to the other ingredients.
- You can serve it as a side dish, with yogurt for breakfast, or on ice cream for desert.
- Great served over waffles, pancakes.
- You can subsitute with Raspberry Balsamic Dressing: 1/2 cup olive oil, 1/4 cup balsamic vinegar, 2 - 3 tablespoon raspberry preserves. Mix together whisking until thick and smooth. Yields 3/4 cup
- You can subsitute with Peach Balsamic Vinegar (available at amazon online) add sugar as above.
