Ingredients
1 Tbsp olive oil
1/4 cup finely chopped onion
1 tsp grated fresh ginger
1 garlic clove, minced
1 1/4 cups white or basmati rice
1 (15-ounce) can light coconut milk
Directions
Heat oil in medium saucepan over medium heat. Add onion; cook 3 minutes, stirring frequently. Add ginger and garlic; cook 30 seconds, stirring constantly. Add rice; cook 1 minute, stirring constantly. Stir in coconut milk, broth, cinnamon stick, and salt; bring to a boil. cover and simmer 18 minutes or until liquid is absorbed and rice is tender.
Remove from heat and remove cinnamon stick; let stand 5 minutes. Drizzle with lime juice and fluff with a fork. sprinkle with green onions.
