Chicken Pesto Sandwiches
Ingredients
1 (8-ounce) package cream cheese, softened
1/4 cup plain yogurt
1/3 cup pesto
1/4 cup grated Parmesan cheese
2 cups chopped cooked chicken (
1 red bell pepper, chopped (optional)
French bread Rolls (long french bread for party sandwiches you can cut to size)
3 tablespoons butter, softened
lettuce


Directions
  • In medium bowl, combine cream cheese, yogurt, and pesto; beat until smooth. Stir in cheese, then add chicken and red bell peppers. 
  • Spread one side of each slice of bread or rolls with the softened butter. Make sandwiches with the bread, buttered side in, and the filling. Serve immediately, or chill for 4 hours, or wrap and freeze. If you aren't going to freeze them, you can add the lettuce. If freezing the sandwiches, omit the lettuce for now. 

NOTE: If frozen, let thaw in an insulated lunchbox with a frozen gel pack. Use a really good roll that has some character. No sandwich should be made with a soggy white hot dog bun.


NOTE: Chicken Pesto Sandwiches are a quick and easy, delicious sandwich recipe you can eat immediately or freeze to tuck into lunchboxes later.
